Mutton Shoulder is another classic for Curries and Stews…in fact anything that involves the meat being braised in a sauce of some fashion! The texture of the meat means it is better able to stand up to the strong spices and slow-cooking that a lot of Indian Meat dishes require. Also highly suitable for slow roasting.

 

Cut from the forequarter of the animal, the Shoulder of Mutton has a distinctive character and texture. The grain of the flesh is open and intensely flavoured with earthy notes! There’s subtle marbling in the muscle tissue, that’s interspersed with melting fat and connective tissue, resulting in unbelievably tender and succulent meat after cooking! Leaving the bone in is a real treat, and imparts a deeply savoury and Umami flavour to the meat and consequently to any braising liquid. When roasted, the outer fat and skin will crisp up to a crunch, giving yet another dimension in flavour and texture!

 

You’ll be pleased to know that all of our Mutton originates from a breed of sheep known as Texel. This breed is renowned as being the most expensive sheep breed to buy in the UK because their breeding lines are so tightly controlled. This also ensures that the quality of the meat is consistently strong and uniform. Although the Texel breed hails from the Netherlands, the breed has grown in popularity in the UK, specifically because of the exceptional quality of its meat. The Texel is renowned for its outstanding muscular development, which means that most of its carcass consists of lean meat. In the meat industry, the leaner the meat, the higher its quality, and this is consistent with our ethos of only supplying the absolute best quality meats to our customers.
