Mutton Front Chops or Cutlets are cut from what’s known as the ‘best end of neck’, in between the Middle Neck and the Loin. Mutton Cutlets, much like Mutton Back Chops have a robust and earthy flavour when compared to Lamb, and are a much more refined and rounded flavour profile. The ‘best end’ is essentially the first eight ribs after the neck, and would essentially make up a “rack”, and become cutlets when separated. The meat is very tender and juicy, with just a small amount of fat towards the end of the bone. This fat would ordinarily be removed when “French trimmed” but we’d recommend you leave it on as it has a wonderfully distinctive flavour! Again, in similar fashion to the Mutton Back Chops, they also lend themselves very well to cooking in sauces as well as grilling, and in fact, are absolutely wonderful in a curry!

 

You’ll be pleased to know that all of our Mutton originates from a breed of sheep known as Texel. This breed is renowned as being the most expensive sheep breed to buy in the UK because their breeding lines are so tightly controlled. This also ensures that the quality of the meat is consistently strong and uniform. Although the Texel breed hails from the Netherlands, the breed has grown in popularity in the UK, specifically because of the exceptional quality of its meat. The Texel is renowned for its outstanding muscular development, which means that most of its carcass consists of lean meat. In the meat industry, the leaner the meat, the higher its quality, and this is consistent with our ethos of only supplying the absolute best quality meats to our customers.
