Product Description
This product is a massive favourite of our customers who visit “Deli 64” inside our shop, and our street food counter, at the front of the shop, “The Butchers Kitchen”, and with good reason too. It’s a labour intensive product, and requires a lot of preparation, but the results are outstanding, and witnessing the beaming smiles on our customers faces when they bite into some, is worth all of the hard work! The heart and soul that goes into its painstaking preparation means that this product is every inch an artisan product! First of all, the Lamb Legs are deboned and cured traditionally using a wet salt cure. We add a few flavouring herbs and spices to this cure, so that the flavour permeates into the meat, leaving a subtle hint. This curing process takes between 10-15 days, depending on the weight of the Lamb Leg. It’s then slow cooked for approximately 2 hours. Finally it’s allowed to rest, cool, and is then sliced. The cooling process ensures that the meat is tender and juicy, and importantly, holds together during the slicing process.
