Oxtail is meat from the tail of a Cow, or other Cattle, usually used for making Soups or Stews. Once a throwaway cut of beef, and free to anyone who asked for it, Oxtail has now become a hugely popular cut, and rightly so. High levels of collagen result in a wonderfully comforting gelatinous texture of beef that is difficult to describe. It’s an absolute must try cut of beef.

 

Slow cooking this distinctive cut brings out a robust, full-bodied flavour while creating meltingly tender Meat. Oxtail is a super-delicious cut of meat, and just needs a bit of TLC to bring out its star attraction, the wonderfully soft and tender gelatinous meat. A cut of meat that requires patience…around 3 hours of patience, but your reward for that patience is a deep and complex beefy flavour, that deepens even more if left overnight, and eaten the next day. Absolutely perfect for the slow cooker or a pressure cooker. Comparing braised oxtail to a short rib, the oxtail is more tender with a silkier texture.
