Product Description

Shanks are from the bottom section of the hind leg, just below the knee and are popular in both either Eastern and Western cuisines. A classic braised Lamb Shank with Gravy, Mash and Winter Vegetables or a rich, decadent Nihari dish? The choice is yours! The shank is a hearty cut of meat with the distinctive, unmistakable flavour that good quality lamb has. Made up of the leg muscles, connective tissue as well as the marrow-filled bone that imparts further flavour and natural oils into the flesh and gravy, the Lamb Shank stands toe to toe with any meat, as far as deep, complex flavour profiles go. The perfect proportion of fat balances out the meat and its earthy flavours, keeping it as succulent and sumptuous as expected, whilst slow cooking, whether that be roasting or braising, allows all of the marbling and collagen to render out, thickening the gravy and adding a silky sheen, whilst simultaneously adding yet more flavour. Can there ever be such a thing as too much flavour?!

 

You’ll be pleased to know that all of our grass fed lamb is sourced from just down the road in Shropshire, so it’s as local as can be!
