Boneless Rolled Shoulder of Lamb

No hassle with bones here. Our Master Butchers have meticulously removed the bone, leaving just the flesh, with all of the various muscle groups still connected together, and a nice layer of tender fat. The marbling of fat makes this joint ideal for slow cooking- and who doesn’t love slow cooked meat? The fat melts into the meat making a delicious, moist and sweet joint which will be a hit for any dinner table. Absolutely perfect for North African and Middle Eastern dishes, where the melody of warming spices, along with the sweet and sometimes sour fruits and seeds, marry so well with the succulent and sweet flesh, made all the more succulent with the marbling of fat and connective tissue, will ensure that your dinner party will be the stuff of legends! The joint can be sent rolled and ready for the oven. Alternatively we can send it unrolled, ready for you to marinade (or not), and then place flat on the barbecue for grilling. The skin will crisp up nicely, leaving the flesh a lovely pink colour and unmistakably juicy! As it’s cooked flat, and with no bone, carving is light work, in much the same way as one would carve a Beef Brisket. However it’s cooked, you can be confident that the familiar, mouthwatering deep rounded flavours of top quality Lamb will be there in abundance!
