Perfect for slow roasting or slow cooking, its robust flavour can stand up to the big spice hits of Middle Eastern cooking, while the chunks of meat that fall off after slow cooking make it the perfect cut for piling high onto platters and just letting everyone help themselves. Dainty, refined and elegant it ain’t. Rustic, full flavoured and a crowd favourite it definitely is!
